My youngest son, Brent, loves coconut. I adapted a cookie dough recipe and came up with this recipe for him. Hope you enjoy it as much as he does.

Ingredients

  • 1 3/4 c
    powdered sugar
  • 1 3/4 c
    flaked coconut
  • 1 c
    chopped almonds
  • 1/2 c
    sweetened condensed milk
  • 2 c
    (12 oz) semisweet chocolate chips
  • 2 Tbsp
    shortening

How to Make Brent's Chocolate Coconut Candies

Step-by-Step

  1. In a large bowl, combine the powdered sugar, coconut, almonds and milk. Shape into 1 inch balls and regrigerate until firm. Approximatelly 20 minutes.
  2. In a microwave, melt the chips and shortening on high for about 1 minute; sitr. Microwave at additional 10 to 20 seconds until smooth.
  3. dip balls in the melted chocolate; allow the excess to drip off and place on waxed paper. Let stand until set and store in an airtight container.
  4. Tipp: You can also use chocolate or white bark if you want to. I have used both.
