After making my Strawberry Shortbread Bark, I started to think about other fruit desserts that could be transformed into a "bark". I saw dried blueberries at my supermarket and thought about Blueberry Buckle. So, I took a chance and made a batch of bark, much like the strawberry, using blueberries instead. The result is this delicious blueberry candy. I hope you'll try it ..... and like it!!

Ingredients

  • 1 - 12 ounce bag white baking morsels (melted)
  • 2/3 cup broken shortbread cookies (4 or 5 2"x2" cookies)
  • 1/2 cup dried blueberries (+ extra to sprinkle on top)
  • 1/3 cup broken pretzels
  • 1/2 cup toasted pecan pieces

How To Make blueberry buckle bark

  • Step 1
    Line a cookie sheet with waxed paper. Set aside.
  • Step 2
    Combine all ingredients in a large bowl, mixing gently.
  • Step 3
    Turn out onto prepared cookie sheet. Spread evenly and sprinkle with about 1 tablespoon dried blueberries. Press down lightly.
  • Step 4
    Refrigerate at least 1 hour or until firmly set.
  • Step 5
    Break into pieces and store in an airtight container. Makes about 1 1/2 pounds of candy.
