I make this super easy slice at Christmas time - it makes fabulous gifts. White chocolate is dotted with large chunks of cookies (I like shortbread best) and dried apricots, cranberries, chopped nuts and toasted coconut. Use kitchen sheers to cut the apricots. Chilling time is cooking time. Recipe can be double and quadrupled with ease.

Ingredients For betty's fruit, cookie and white chocolate slice

1 pound (500g) good quality white chocolate

1 1/2 cups large cookie crumbs/chunks

1/2 cup dried apricots, chopped

1/2 cup dried cranberries

1/2 cup chopped nuts (i like toasted peanuts and almonds)

1/2 cup shredded coconut, toasted
How To Make betty's fruit, cookie and white chocolate slice

1Line and grease a deep 19 cm/8 inch square cake tin. I use a sheet pan. Make sure there is a good overhang of baking paper over all the sides of the tin. It will help with removing the slice at the end.

2Place the chocolate in a large microwave safe bowl. Melt in short 30 second bursts stirring with a metal spoon after each beep. Repeat until the chocolate is melted, is will take about 2-3 minutes in total (4-6 x30 second cooking times)

3Once the chocolate is melted, add in the cookie chunks, dried fruit, chopped nuts and toasted coconut. Pour into the prepared tin and refrigerate covered for 2-3 hours. Slice into squares, triangles or un-even shards. Enjoy or wrap as gifts. If it's very hot (summer) keep in the fridge.
