Betty's Fruit, Cookie and White Chocolate Slice
Chilling time is cooking time. Recipe can be double and quadrupled with ease.

·1 pound (500g) good quality white chocolate
·1 1/2 cups large cookie crumbs/chunks
·1/2 cup dried apricots, chopped
·1/2 cup dried cranberries
·1/2 cup chopped nuts (i like toasted peanuts and almonds)
·1/2 cup shredded coconut, toasted
How to Make Betty's Fruit, Cookie and White Chocolate Slice
- Line and grease a deep 19 cm/8 inch square cake tin. I use a sheet pan. Make sure there is a good overhang of baking paper over all the sides of the tin. It will help with removing the slice at the end.
- Place the chocolate in a large microwave safe bowl. Melt in short 30 second bursts stirring with a metal spoon after each beep. Repeat until the chocolate is melted, is will take about 2-3 minutes in total (4-6 x30 second cooking times)
- Once the chocolate is melted, add in the cookie chunks, dried fruit, chopped nuts and toasted coconut. Pour into the prepared tin and refrigerate covered for 2-3 hours. Slice into squares, triangles or un-even shards.
Enjoy or wrap as gifts. If it's very hot (summer) keep in the fridge.
