15 minute pecan pralines

This was given to me by one of the senior citizens I worked with about 20 years ago. I know she would be pleased I am posting it. I'll bet she is smiling down from above. These are so simple. The sugar browns as it cooks, so there is no need for butterscotch or brown sugar. They remain soft and not sticky. I have a photo of the finished product, but can't figure out how to upload on my IPad. My laptop has crashed.

14 to 16 two inch candies
Ingredients
- 2 cups white sugar
- 1 teaspoon soda
- 1 cup buttermilk
- 1 pinch salt
- 2 tablespoons butter, cold
- 2 cups pecans, halves or some in pieces
- 1 teaspoon vanilla extract
How To Make 15 minute pecan pralines

Step 1Mix together sugar, soda, buttermilk and salt in medium pan with a handle. Cook on high for 5 minutes stirring constantly. It will start to get a golden brown color. Very important you never stop stirring.

Step 2After 5 minutes add butter and pecans and continue stirring until candy reaches soft ball stage if dropped in cold water.

Step 3Remove from heat and stir in vanilla. Stir well and then let cool long enough for you to lay wax paper or parchment paper on the counter or cookie sheet.

Step 4Spoon by heapimg tablespoon on paper. Let cool until set. Store in airtight container.
