A great way to use of extra zuchinni out of the garden

Ingredients

  • 3 - eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 3 cups plain flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1 cup nuts of choice
  • 1/2 cup shredded coconut
  • - chocolate chips or anyother chip if desired
  • 2 cups grated zuchinni

How To Make zuchinni bread

  • Step 1
    Beat eggs until fluffy. Add sugar, oil, vanilla and zuchinni. Mix well.
  • Step 2
    In a seperate bowl mix dry ingredients. Add to egg mixture. Add nuts,coconut and chip mix well.
  • Step 3
    Bake 325 for 1 hour in a well greased loave pan. (This makes 2 Loaves). Let stand 10 minutes before removing from pan. ENJOY. THIS ALSO FREEZES WONDERFULLY.
