Ingredients
- 16 ounces zucchini, cubed
- 2 1/4 cups flour
- 1 1/4 cups sugar
- 1/2 cup shortening
- 1/2 cup milk
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 2 large eggs
- 1 1/4 cups walnuts, chopped

Step 1In blender puree zucchini until smooth. You need 1 1/2 cups pureed for the recipe. Oven to 350 degrees. Grease 9x13. Combine all but nuts in a large bowl. Blend until just mixed, then beat on high 2 min or until smooth, scraping bowl. Stir in walnuts. Bake 30-35 min or until toothpick is clean. Cool completely in pan.

Step 2NOTE: the original recipe says frost with sour cream frosting, but I could never find any recipe for that, so I assume she meant to frost with a cream cheese frosting.
