Very soft,deliciuos and yummy cake for sunday.

Ingredients

  • 2 large zuchini -grated on grater on biggest holes
  • 3 large eggs
  • 200 grams caster sugar
  • 1/2 cup olive oil
  • 350 grams continental flour
  • 1 bag baking powder(15 g )
  • 1 - teaspon cinnamon powder
  • 1 can fruit salad in juice (825 g ) strain with siever
  • 1 - extra unsalted butter
  • 50 grams extra continental flour
  • 1 - sachet vanilla sugar
  • 25 grams caster sugar
  • 25 grams extra unsalted butter - room temperature

How To Make zucchini cake

  • Step 1
    Beat eggs and sugar in a bowl with an electric mixer until light and fluffy.Slowly pour in 1/3 of oil and add 1/3 of flour and still mix.Repeat this until you use all oil and flour,then add baking powder and zucchini and lightly fold in,but now with spatula.
  • Step 2
    Grease ....29 cm diameter round baking pan with unsalted butter and dust with extra continental flour ( bottom and sides)Pour the mixture in,dust with cinnamon,add the strained fruit from can and sprinkle the top with streusel.Bake in preheated oven at 170 C....35 - 40 minutes or when you taste with skewer come dry.
  • Step 3
    Streusel: In a bowl mix together with you fingers 50 g continental flour,1 vanilla sugar,25 g caster sugar and 25 g unsalted,make streusel.
