My sister-in-law shared this recipe with me and it is delicious! The zucchini makes the brownies nice and moist and you'd never know there was zucchini in these brownies!

  • 1/2 c
    vegetable oil
  • 1-1/2 c
    white sugar
  • 2 tsp
    vanilla extract
  • 2 c
  • 1/2 c
    unsweetened cocoa powder
  • 1-1/2 tsp
    baking soda
  • 1 tsp
  • 2 c
    shredded zucchini, drained
  • 1/2 c
    chopped walnuts, optional

  • 6 Tbsp
    unsweetened cocoa powder
  • 1/4 c
  • 2 c
    powdered sugar
  • 1/4 c
  • 1/2 tsp
    vanilla extract

How to Make Zucchini Brownies


  1. Preheat oven to 350 degrees. Grease and flour 9 x 13 pan
  2. In large bowl, mix together the oil, sugar, and 2 tsp. vanilla extract. Combine the flower, 1/2 c. cocoa, baking soda, and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread in pan.
  3. Bake for 25 to 30 minutes until brownies spring back when touched.
  4. To make the frosting, melt together the cocoa and butter; set aside to cool. In a medium bowl, blend together the powdered sugar, milk, and vanilla. Stir in the cocoa mixture. Spread over cooled brownies.
