zucchini brownies

My sister-in-law shared this recipe with me and it is delicious! The zucchini makes the brownies nice and moist and you'd never know there was zucchini in these brownies!

Ingredients
- 1/2 cup vegetable oil
- 1-1/2 cup white sugar
- 2 teaspoons vanilla extract
- 2 cups flour
- 1/2 cup unsweetened cocoa powder
- 1-1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 cups shredded zucchini, drained
- 1/2 cup chopped walnuts, optional
- FROSTING
- 6 tablespoons unsweetened cocoa powder
- 1/4 cup butter
- 2 cups powdered sugar
- 1/4 cup milk
- 1/2 teaspoon vanilla extract

Step 1Preheat oven to 350 degrees. Grease and flour 9 x 13 pan

Step 2In large bowl, mix together the oil, sugar, and 2 tsp. vanilla extract. Combine the flower, 1/2 c. cocoa, baking soda, and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread in pan.

Step 3Bake for 25 to 30 minutes until brownies spring back when touched.

Step 4To make the frosting, melt together the cocoa and butter; set aside to cool. In a medium bowl, blend together the powdered sugar, milk, and vanilla. Stir in the cocoa mixture. Spread over cooled brownies.
