My sister-in-law shared this recipe with me and it is delicious! The zucchini makes the brownies nice and moist and you'd never know there was zucchini in these brownies!

vegetable oil
1-1/2 c
white sugar
2 tsp
vanilla extract
2 c
1/2 c
unsweetened cocoa powder
1-1/2 tsp
baking soda
1 tsp
2 c
shredded zucchini, drained
1/2 c
chopped walnuts, optional


6 Tbsp
unsweetened cocoa powder
1/4 c
2 c
powdered sugar
1/4 c
1/2 tsp
vanilla extract

How to Make Zucchini Brownies


  • 1Preheat oven to 350 degrees. Grease and flour 9 x 13 pan
  • 2In large bowl, mix together the oil, sugar, and 2 tsp. vanilla extract. Combine the flower, 1/2 c. cocoa, baking soda, and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread in pan.
  • 3Bake for 25 to 30 minutes until brownies spring back when touched.
  • 4To make the frosting, melt together the cocoa and butter; set aside to cool. In a medium bowl, blend together the powdered sugar, milk, and vanilla. Stir in the cocoa mixture. Spread over cooled brownies.
