My sister-in-law shared this recipe with me and it is delicious! The zucchini makes the brownies nice and moist and you'd never know there was zucchini in these brownies!

Ingredients

  • 1/2 cup vegetable oil
  • 1-1/2 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1-1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups shredded zucchini, drained
  • 1/2 cup chopped walnuts, optional
  • FROSTING
  • 6 tablespoons unsweetened cocoa powder
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

How To Make zucchini brownies

  • Step 1
    Preheat oven to 350 degrees. Grease and flour 9 x 13 pan
  • Step 2
    In large bowl, mix together the oil, sugar, and 2 tsp. vanilla extract. Combine the flower, 1/2 c. cocoa, baking soda, and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread in pan.
  • Step 3
    Bake for 25 to 30 minutes until brownies spring back when touched.
  • Step 4
    To make the frosting, melt together the cocoa and butter; set aside to cool. In a medium bowl, blend together the powdered sugar, milk, and vanilla. Stir in the cocoa mixture. Spread over cooled brownies.
