zucchini bread/cake

This can be baked in a loaf pan or a bundt pan. When I serve it loaf style I put it out with butter and cream cheese. Should I bake it in a bundt pan I let it cool, cut it in half horizontally, frost it with cream cheese frosting, place to the top half back on and frost the top and garnish with chopped walnuts. See? Two treats in one...LOL I also bake it in mini loaf pans and/or mini bundt pans. A nice way to hand it out to the neighbors.

Ingredients

  • 3 - eggs
  • 1 cup vegetable oil
  • 2 cups grated zucchini (peel and all)
  • 3 teaspoons vanilla
  • 3 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup chopped walnuts

How To Make zucchini bread/cake

  • Step 1
    Preheat oven to 325.
  • Step 2
    Blend all wet ingredients including grated Zucchini.
  • Step 3
    Blend all dry ingredients with chopped nuts.
  • Step 4
    Add dry ingredients to wet ingredients blending well.
  • Step 5
    Pour into either a loaf pan or bundt pan. Don't forget to spray which ever you use with cooking spray.
  • Step 6
    Bake for 1 hour, I suggest you check it at the 45 minute interval. It may need more or it could be done at this point. Just keep an eye on it.
