I found this recipe in our monthly Electric Co-op magazine.While I'm not a peach lover, I still had to try it. Turned out really well & with a few modifications, it will be even better!

Ingredients

CAKE

1 1/2 c
sugar
2 c
flour
1 tsp
baking soda
1 tsp
cinnamon
1 tsp
nutmeg
1/2 tsp
allspice
1/2 tsp
salt
1 tsp
vanlla
1 c
buttermilk
1 c
oil
3
eggs (beaten)
1 c
chopped nuts ( i use pecans)
1 1/2 c
peaches (peeled & sliced)

SAUCE

1 c
sugar
1/2 tsp
baking soda
1/2 c
butter
2 tsp
vanilla
1/2 c
buttermilk

How to Make Yummy Peach Cake

Step-by-Step

  • 1CAKE
  • 2Preheat oven to 300 degrees. Spray Bundt pan with cooking spray. (I use bakers joy).
  • 3Combine all dry ingredients in a large bowl.
  • 4in another bowl, combine buttermilk, eggs, oil & vanilla.
  • 5combine wet and dry ingredients and mix well, either by hand or with mixer.
  • 6fold in peaches and nuts and pour into prepared pan.
  • 7bake 1 hour or until firm.
  • 8SAUCE
  • 9while cake is baking, mix all sauce ingredients in pan. Bring to a boil over medium heat. Stir constantly.
  • 10reduce heat and continue to cook until slightly thickened.
  • 11Immediatly after removing cake from oven, pour hot sauce slowly over cake. As it saoks into cake, continue pouring until all the sauce is used.
  • 12Cool & turn out onto a large plate.
  • 13*NOTE* the next time I make this, I'll cube the peaches so they will be mixed all in the cake.
