yummy peach cake

I found this recipe in our monthly Electric Co-op magazine.While I'm not a peach lover, I still had to try it. Turned out really well & with a few modifications, it will be even better!

Ingredients

  • CAKE
  • 1 1/2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 teaspoon vanlla
  • 1 cup buttermilk
  • 1 cup oil
  • 3 - eggs (beaten)
  • 1 cup chopped nuts ( i use pecans)
  • 1 1/2 cups peaches (peeled & sliced)
  • SAUCE
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup butter
  • 2 teaspoons vanilla
  • 1/2 cup buttermilk

How To Make yummy peach cake

  • Step 1
    CAKE
  • Step 2
    Preheat oven to 300 degrees. Spray Bundt pan with cooking spray. (I use bakers joy).
  • Step 3
    Combine all dry ingredients in a large bowl.
  • Step 4
    in another bowl, combine buttermilk, eggs, oil & vanilla.
  • Step 5
    combine wet and dry ingredients and mix well, either by hand or with mixer.
  • Step 6
    fold in peaches and nuts and pour into prepared pan.
  • Step 7
    bake 1 hour or until firm.
  • Step 8
    SAUCE
  • Step 9
    while cake is baking, mix all sauce ingredients in pan. Bring to a boil over medium heat. Stir constantly.
  • Step 10
    reduce heat and continue to cook until slightly thickened.
  • Step 11
    Immediatly after removing cake from oven, pour hot sauce slowly over cake. As it saoks into cake, continue pouring until all the sauce is used.
  • Step 12
    Cool & turn out onto a large plate.
  • Step 13
    *NOTE* the next time I make this, I'll cube the peaches so they will be mixed all in the cake.
