Ingredients

1yellow cake mix
-
3large eggs
-
1/3 cbutter, melted and cool

1 cwater
-
1 can(s)crushed pineapple (drained reserving juice)

2 ccoconut, flaked (divided in half)

1 jar(s)orange marmalade
-
1 cmango daquairi mix
How to Make You are my Sunshine Cake
- Preheat oven to 350 degrees F. Add one cup of coconut and half of the pineapple to the dry cake mix. Add eggs, water, juice 1 tablespoon of marmalade, and butter. Beat on low then medium speed til evenly mixed. Pour batter into Bundt pan. Drop teaspoonfuls of the marmalade onto batter keeping it in the center. I make sure it is close enough together so no one misses out on the filling, but careful not to make the blobs too heavy. This will keep the marmalade from settling all the way to the bottom of the batter. Sprinkle the other cup of coconut on the cake. :) Bake at 350 for 25 min or til cake springs back when touched.
- Allow cake to cool until just warm and invert onto plate. While cake is cooling stir together 1/2 cup of marmalade and 2 tablespoons of daiquiri mix. Microwave mix for 10 to 15 seconds or until syrupy. Pour over cake. You can add a little crushed pineapple and/or coconut to this mixture for a little more oomph..If you do, add another teaspoon of marmalade. :O the more oomph the better! :D
- To create a sticky crusty layer over the cake, just broil on high on a baking sheet til it bubbles and browns slightly. I do this while keeping my oven door open so that I can see it.. hate to burn something this yummy. And one more thing, it's neat to add slivered almonds to the coating and have them all nice and toasted too!
