yam cake & frosting

This cake is a lot like carrot cake but more moist. I got this recipe in high school from a friends mother, when I had dinner at her home one night. This was many, many years ago.

Ingredients
- 2 cups sugar
- 1 1/2 cups oil
- 4 - eggs
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 3 cups grated yam
- 1 cup chopped walnuts
- FROSTING:
- 1 pound powderd sugar
- 1 - 8 oz. box cream cheese
- 4 tablespoons butter, room temperature
- 2 teaspoons vanilla extract
How To Make yam cake & frosting

Step 1Cream sugar and oil.

Step 2Add eggs and cream well.

Step 3Add dry ingredients and mix well.

Step 4Stir in nuts and yams.

Step 5Bake at 325 degrees in two greased 9" round cake pans or a 9X13 greased dish. Bake until toothpick inserted in center comes out clean. Cool and frost.

Step 6Frosting: Cream the cream cheese and butter well. Add sugar and cream well. Add vanilla, mix well and spread on cooled cake.
