yam cake & frosting

This cake is a lot like carrot cake but more moist. I got this recipe in high school from a friends mother, when I had dinner at her home one night. This was many, many years ago.

Ingredients

  • 2 cups sugar
  • 1 1/2 cups oil
  • 4 - eggs
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 3 cups grated yam
  • 1 cup chopped walnuts
  • FROSTING:
  • 1 pound powderd sugar
  • 1 - 8 oz. box cream cheese
  • 4 tablespoons butter, room temperature
  • 2 teaspoons vanilla extract

How To Make yam cake & frosting

  • Step 1
    Cream sugar and oil.
  • Step 2
    Add eggs and cream well.
  • Step 3
    Add dry ingredients and mix well.
  • Step 4
    Stir in nuts and yams.
  • Step 5
    Bake at 325 degrees in two greased 9" round cake pans or a 9X13 greased dish. Bake until toothpick inserted in center comes out clean. Cool and frost.
  • Step 6
    Frosting: Cream the cream cheese and butter well. Add sugar and cream well. Add vanilla, mix well and spread on cooled cake.
