Ingredients

3 c
flour
2 tsp
baking soda
2 tsp
cinnamon
1/2 tsp
salt
1/2 tsp
nutmeg
1/4 tsp
ginger
1 c
sugar
1 c
packed brown sugar
1 c
buttermilk
3/4 c
oil
4
eggs
2 tsp
vanilla
1 bag(s)
16 0z carrots peeled and grated
1 c
crushed pineapple ,drained
1 c
chopped walnuts
1 c
flaked coconut
1/2 c
raisins

CREAM CHEESE FROSTING

1/2 c
butter ,softened
1 pkg
8 oz cream cheese
1 pkg
16 oz. powdered sugar
2 tsp
grated orange peel
1 tsp
vanilla

Step-By-Step

1Combined first 6 ingredients in a medium bowl ,set aside
2Combine sugars, buttermilk, vegetable oil. eggs and vanilla in a large bowl;stir until well blended.(I use my kitchen aid for blending)
3Add flour mixture, carrots, pineapple, walnuts,coconut and raisins,stirring until well blended
4Grease 3 (8 inch) I used (9") round cake pans. Line bottoms with circles of parchment or waxed paper, grease and flour paper. Pour batter into pans
5Bake 350 F. for 30 minutes or until wooden toothpick comes out clean
6cool in pans for 10 minutes, then invert onto wire racks and let cool completely, first remove paper.
7Spread cream cheese between layers, and refrigerate over night
