Ingredients
- 3 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 cup sugar
- 1 cup packed brown sugar
- 1 cup buttermilk
- 3/4 cup oil
- 4 - eggs
- 2 teaspoons vanilla
- 1 bag 16 0z carrots peeled and grated
- 1 cup crushed pineapple ,drained
- 1 cup chopped walnuts
- 1 cup flaked coconut
- 1/2 cup raisins
- CREAM CHEESE FROSTING
- 1/2 cup butter ,softened
- 1 package 8 oz cream cheese
- 1 package 16 oz. powdered sugar
- 2 teaspoons grated orange peel
- 1 teaspoon vanilla
How To Make world's best carrot cake

Step 1Combined first 6 ingredients in a medium bowl ,set aside

Step 2Combine sugars, buttermilk, vegetable oil. eggs and vanilla in a large bowl;stir until well blended.(I use my kitchen aid for blending)

Step 3Add flour mixture, carrots, pineapple, walnuts,coconut and raisins,stirring until well blended

Step 4Grease 3 (8 inch) I used (9") round cake pans. Line bottoms with circles of parchment or waxed paper, grease and flour paper. Pour batter into pans

Step 5Bake 350 F. for 30 minutes or until wooden toothpick comes out clean

Step 6cool in pans for 10 minutes, then invert onto wire racks and let cool completely, first remove paper.

Step 7Spread cream cheese between layers, and refrigerate over night
