worlds best blueberry cake
The recipe of my great Grandmother Florence Posey, this seriously is AMAZING! Makes amazing muffins also, I normally double the blueberries or even triple them and double the recipe also. this recipes works well for doing blackberry, boysenberry, raspberry almost any kind of berries. In addition my mom messaged me :This is a recipe that Memire (my grandmother Posey) would always take when we went on our boat for the week-end. I always looked forward to this as much as being on the boat! Seriously!

Ingredients
- 1/2 teaspoon salt
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 2 - egg whites beaten stiff
- 1/2 cup shortening
- 1 cup sugar
- 2 - egg yolks
- 1/3 cup milk
- 1 teaspoon vanilla
- 1 1/2 cups blueberries ( floured lightly ) otherwise color runs

Step 1Beat egg white stiff and set aside.

Step 2Cream shortening with sugar and add well beaten egg yolks.

Step 3add alternately with the milk and flour mixtures.

Step 4Fold in egg white carefully and vanilla.

Step 5Last fold in blueberries.

Step 6Sprinkle bottom of a pan with 1/4 cup sugar ( white ) Bake at 350 degrees for 35-45 minutes. Use tin leaf pan works best ( I use pyrex glass which is fine also )
