I wish I had a picture but I have no doubt that all you imaginative types will see what I am doing here. I came up with the recipe for a Winter Wonderland type theme dance for my daughter's Jr High. She came back home & said everyone adored them. They really come together if you use foil or snowflake wrappers, the Wilton Color Mist in blue, crystal clear flake glitter & edible silver "paper stars" glitter. All of this is easily available in the baking department at craft stores like Michael's. You can easily make your own batter & frosting instead.

How to Make Winter Wonderland Mint Chip Cupcakes

Step-by-Step

  1. Prepare your cupcake batter & oven according to directions on package making sure to eliminate the egg yolks to keep the batter white. Add one teaspoon of vanilla & a cup of mint chips to the batter before adding batter to your cupcake wrappers.
  2. Bake according to directions.
  3. Frosting - Add prepared cream cheese frosting to mixing bowl, add remainder of vanilla, whip on high with a hand mixer.
  4. When cupcakes are cool, pipe cream cheese frosting with a large star type tip onto cupcakes for a high mound.
  5. Use blue color spray to outline the swirls on the frosting, you just lightly spray over the top..use a couple of cupcakes as practice to get it down before doing the rest.
  6. Sprinkle with silver stars glitter and then a heavy dusting of the clear glitter on top.

12 Really Simple Eggplant Recipes

Eggplant is very underrated. If eaten raw, it’s bitter. But once it’s baked or fried, eggplant has a mild taste with a creamy texture.
