Ingredients

3 c
cake flour
1/2 tsp
salt
4 tsp
baking powder
3/4 c
shortening
1 3/4 c
white sugar
1 c
milk
5
egg whites
1 tsp
vanilla extract
1/2 tsp
almond extract

How to Make White Mountain Cake

Step-by-Step

  • 1Sift and measure flour. Add salt and baking powder, and sift again.
  • 2In a large bowl, cream shortening. Add 1 cup of the sugar gradually, and cream until fluffy. Add sifted ingredients alternately with milk and flavoring. Beat thoroughly after each addition.
  • 3Beat egg whites until stiff. Gradually add in the remaining 3/4 cup sugar to egg whites and fold into mixture. Pour batter into greased 9 inch round pans. Using parchment paper to line the bottom will yield a better result when removing from pan.
    Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.
  • 4Cool, and frost with Creamy Frosting.

    To make Prosperity Cake, add orange extract instead of almond.
