How to Make White Mountain Cake
- Sift and measure flour. Add salt and baking powder, and sift again.
- In a large bowl, cream shortening. Add 1 cup of the sugar gradually, and cream until fluffy. Add sifted ingredients alternately with milk and flavoring. Beat thoroughly after each addition.
- Beat egg whites until stiff. Gradually add in the remaining 3/4 cup sugar to egg whites and fold into mixture. Pour batter into greased 9 inch round pans. Using parchment paper to line the bottom will yield a better result when removing from pan.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.
- Cool, and frost with Creamy Frosting.
To make Prosperity Cake, add orange extract instead of almond.
