I had last minute company coming, so I looked in my pantry and fridge...found some ingredients and got a little creative. Well, it was a hit! You can make a homemade cake and filling if you have the time. But, this was perfect for everyone!

Ingredients

  • 1 box classic white cake mix-bake according to package directions.
  • 1 can comstock lemon pie filling
  • MASCARPONE FROSTING:
  • 8 ounces cream cheese
  • 8 ounces mascarpone
  • 1/2 cup butter, softened
  • 2-2 1/2 cups confectioners' sugar
  • 1 pinch kosher salt
  • - heavy cream, enough to make smooth, spreading consistencey
  • 1 teaspoon vanilla extract

How To Make layer cake w/lemon filling and mascarpone frosting

  • Step 1
    Make cake as directed and let cool before assembling.
  • Step 2
    Frosting: In the large bowl of an electric mixer fitted with the paddle attachment, beat the butter, cream cheese, salt and powdered sugar on medium-high speed until light and fluffy. You may want to add small amounts of heavy cream here. Beat in the mascarpone on very low speed until just combined. (Be careful; once you've added the mascarpone, excessive beating can make the frosting curdle.) Stir in the vanilla extract.
  • Step 3
    Tip: If you'd like a little more lemon flavor, add 1 tsp. lemon juice instead of the vanilla to the frosting.
