layer cake w/lemon filling and mascarpone frosting
I had last minute company coming, so I looked in my pantry and fridge...found some ingredients and got a little creative. Well, it was a hit! You can make a homemade cake and filling if you have the time. But, this was perfect for everyone!

Ingredients
- 1 box classic white cake mix-bake according to package directions.
- 1 can comstock lemon pie filling
- MASCARPONE FROSTING:
- 8 ounces cream cheese
- 8 ounces mascarpone
- 1/2 cup butter, softened
- 2-2 1/2 cups confectioners' sugar
- 1 pinch kosher salt
- - heavy cream, enough to make smooth, spreading consistencey
- 1 teaspoon vanilla extract

Step 1Make cake as directed and let cool before assembling.

Step 2Frosting: In the large bowl of an electric mixer fitted with the paddle attachment, beat the butter, cream cheese, salt and powdered sugar on medium-high speed until light and fluffy. You may want to add small amounts of heavy cream here. Beat in the mascarpone on very low speed until just combined. (Be careful; once you've added the mascarpone, excessive beating can make the frosting curdle.) Stir in the vanilla extract.

Step 3Tip: If you'd like a little more lemon flavor, add 1 tsp. lemon juice instead of the vanilla to the frosting.
