white chocolate hug cupcakes
I created this dreamy cupcake for my "baby" who is graduating from high school. He is a chocoholic just like his proud Mama. I fell in love with the White Chocolate Mousse frozen yogurt from TCBY and knew I had to incorporate it somehow. With the white chocolate macadamia nut buttercream frosting, this cupcake is heavenly good and just perfect for my super special son.

Ingredients
- CAKE:
- 16 1/4 ounces box white cake mix
- 2 cups melted tcby white chocolate mousse frozen yogurt
- 3 large egg whites
- 24+ - hershey hugs, unwrapped
- FROSTING:
- 1 cup shortening
- 1 cup salted butter, room temp
- 32 ounces powdered sugar
- 6 ounces white chocolate macadamia nut liquid coffee creamer
- 2 teaspoons clear vanilla extract
How To Make white chocolate hug cupcakes

Step 1Preheat oven to 350 degrees F. Line cupcake tin with paper liners.

Step 2With an electric mixer, combine cake mix, melted frozen yogurt, and egg whites on low for about 30 seconds just to blend; then on medium for 2 minutes. Spoon batter into prepared paper liners until 2/3 full. Bake for about 19 minutes until cake tests done.

Step 3Remove form oven, immediately make a slit in center of cupcake and press in an upside down unwrapped Hershey's Hug until flush with surface of cupcake. Remove to wire rack to cool completely.

Step 4Frosting: In a separate mixing bowl, beat together shortening and butter until creamy. Beat in powdered sugar. Pour in coffee creamer and vanilla and beat until well blended and smooth. Pipe onto cooled cupcakes. Garnish with shaved Hugs if desired.
