In honor of my second cousin, snooksk9, I am posting my first recipe and it is a dessert!
These bars are served at the hospital cafeteria where I work.
They are so wonderful! Moist, sweet and delicious...whenever they are in the case, I cannot walk by without getting one. Enjoy!

Ingredients

BARS

1 c
dried cranberries
1/4 c
orange juice, fresh
1 1/2 c
flour
1 1/2 c
quick cooking oats
1 tsp
baking powder
1/4 tsp
salt
1 1/2 stick
butter or margarine, softened
1 1/2 c
brown sugar, firmly packed
2
eggs
1/2 c
vanilla or white chocolate chips
1/2 c
chopped pecans

FROSTING

1 can(s)
cream cheese frosting
1/8 tsp
orange extract

How to Make White Chocolate, Cranberry Oat Bars

Step-by-Step

  • 1Preheat oven to 350 degrees. Combine cranberries and orange juice in microwavable bowl. Microwave on HIGH 30 seconds. Let stand 10 minutes. Meanwhile, combine flour, oats, baking powder and salt; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, 1 at a time, beating until well blended after each addition. Gradually add flour mixture, mixing well after eachaddition. Stir in cranberry mixture, white chocolate and pecans.
  • 2Spread dough into 9x13 inch baking pan sprayed with cooking spray. Bake 20 to 22 minutes or until center is set. Cool completely on wire rack before cutting to serve.
  • 3For frosting, combine flavoring and frosting. Spread on completely cool bars. Serve.
