white buttermilk cake
This recipe came from a military cookbook my sister-in-law gave me over 20 years ago. She has made this several times. It is wonderful! This cake can be left "naked", dusted with powdered sugar or frosted with your favorite frosting recipe. This one is topped with fresh lemon curd.

Ingredients
- 1 cup shortening
- 3 cups sugar
- 2 cups buttermilk, separated
- 4 cups sifted cake flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 4 medium egg whites, stiffly beaten
- FROSTING OF CHOICE
How To Make white buttermilk cake

Step 1Pre-heat oven to 350 degrees. Cream together shortening and sugar. Add 1/2 cup buttermilk.

Step 2Combine sifted cake flour, baking powder, baking soda and salt. Add to shortening mixture. Alternating with remaining 1 1/2 cups buttermilk. Stir in vanilla. Gently fold in beaten egg whites.

Step 3Pour into a 9x13" greased baking dish. Bake for 50 minutes.
