walnut, raisin, apple bars

I made these yesterday and took them to a Labor Day Cookout and everyone thought they were delicious. I got the recipe from Family Circle Magazine, but I made a few changes. It called for dried apples but I used fresh ones and it didn't have walnuts in it, which I think goes so well with apples. This is going to be a keeper

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 cups light brown sugar, packed
  • 2 large eggs
  • 1 stick butter or margarine, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and cored apples, diced
  • 3/4 cup raisins
  • 3/4 cup walnuts, diced
  • 1/2 cup confectioners' sugar

How To Make walnut, raisin, apple bars

  • Step 1
    Heat oven to 350 degrees. Liberally spray a 13x9 inch baking pan with non stick cooking spray.
  • Step 2
    In a medium bowl, whisk together flour, baking powder, cinnamon and salt; set aside
  • Step 3
    In a large mixing bowl, combine brown sugar, egg and margarine for two minutes until blended. Add vanilla and beat another minute
  • Step 4
    On low speed of mixer, gradually add in the flour mixture until well incorporated.
  • Step 5
    Stir in the apples, raisins and walnuts. Spread in baking pan.
  • Step 6
    Bake for 35 minutes, until toothpick inserted in center comes out clean. While still hot, sprinkle with confectioners' sugar. Do not cut into bars until completely cooled.
  • Step 7
    If you want a gooey dessert, poke holes in the cake and pour caramel topping over the top.....
