wacky cake and 12 minute icing

This recipe comes from my grandma who I miss dearly. She used to make it all the time and then taught me how to make it. This is the most moist chocolate cake I have ever baked or eaten. I hope everyone who makes this recipe enjoys it as much as I do. The recipe calls to bake this cake 30 minutes but in some instances I have had to go as high as 45 minutes. The icing that is used is very good but you have to beat it for 12 minutes. The original recipe makes a small square cake but I double the recipe and use a 9 x 13 inch cake pan.

Ingredients

  • WACKY CAKE
  • 1 1/2 cups flour
  • 1/3 cup cocoa
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup cold water
  • 1/2 cup oil
  • 1 teaspoon vinegar
  • 12 MINUTE ICING
  • 1 stick butter, softened
  • 1/2 cup crisco or lard
  • 1 cup granulated sugar
  • 3 tablespoons flour
  • 2/3 cup milk
  • 1 teaspoon vanilla extract

How To Make wacky cake and 12 minute icing

  • Step 1
    Sift together all the dry ingredients
  • Step 2
    Add the water oil and vinegar and mix thoroughly. This can be done with a spoon or mixer. If you use a mixer you will achieve a denser cake.
  • Step 3
    Bake in oven preheated to 350 degrees for approximately 30 minutes. Times will vary with ovens and elevations. Bake until fork inserted in center comes out clean.
  • Step 4
    Icing: Cream together the butter, crisco and white sugar.
  • Step 5
    Add in the flour one tablespoon at a time until incorporated.
  • Step 6
    Add both the milk and vanilla mixing until incorporated. do this slowly or may splatter everywhere.
  • Step 7
    Once ingredients are incorporated continue to mix on high for 12 minutes.
