wacky cake

This was a favorite recipe of my mothers. She called it a wacky cake because you do not use eggs or milk in the ingredients. Another reason she liked it so well is you only dirted up one pot and the baking pan to make it.

Ingredients
- 1 1/2 cups self rising flour
- 1 cup sugar
- 3 tablespoons cocoa powder
- 1/3 cup cooking oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1 cup water
- COCONUT FROSTING
- 1/2 cup sugar
- 1/2 cup milk
- 1/2 cup coconut
- 1/2 teaspoon vanilla extract
- 2 tablespoons butter
- 1 1/2 tablespoons plain flour
- 1/2 cup pecans, in pieces
How To Make wacky cake

Step 1Pre-heat oven to 350.

Step 2Combine flour, sugar, and cocoa in a 9x9 cake pan and mix well with a fork. Make three holes in mixture. Pour oil, vinegar and vanilla, one in each hole. Pour water over entire mixture. Mix well with fork, do not beat.

Step 3Bake at 350 for 30 minutes or until toothpick inserted in center comes out clean. Frost in pan while cake is still warm.

Step 4Frosting: Combine sugar, milk, butter and flour in small sauce pan. Cook on medium heat until thick, stirring as needed. Add coconut, nuts and vanilla, mix well and spread over warm cake.
