virginia apple joy cake
Today, I was on a mission for a different Apple Cake recipe. I wanted something new and different. I found this delicious recipe on the Virgina Dept of Agriculture website and made the cake tonight. It was by far, the best Apple Cake recipe I have made! I am trying new recipes all the time which can be hit or miss, but, this one is a 'home run' for sure. My family and neighbors gave it 5 stars.

Ingredients
- INGREDIENTS:
- 1 teaspoon baking soda
- 1 1/2 cups canola oil
- 2 cups sugar
- 3 cups apples, chopped
- 1 teaspoon pure vanilla extract
- 1 cup pecans or walnuts, chopped
- 3 cups all purpose flour, sifted
- 1 teaspoon salt
- 3 large eggs
- APPLE CAKE GLAZE
- 1/4 cup evaporated milk
- 4 tablespoons margarine
- 1 cup brown sugar, firmly packed

Step 1Beat eggs, oil, sugar and vanilla with a hand mixer and mix until light yellow and fluffy. In a separate bowl, sift the flour, baking soda and salt. Add the flour mixture to the egg & oil mixture and mix well. Then add chopped apples and nuts and mix again.

Step 2Preheat oven to 325 degrees. Grease and flour a tube pan. Put mixture into tube pan and bake for 1 hour or until done. Remove cake to a cooling rack for 10 minutes. After 10 minutes, remove cake from pan and let cool thoroughly. When cake is done, top with the glaze recipe below.

Step 3For assembly of the Glaze: In a small sauce pot, add the evaporated milk, margarine and brown sugar. Cook for 1-1/2 minutes then spread onto cooled Apple Cake. If you don't prefer a glaze, then you can omit the glaze recipe. It is also delicious with a sprinkle of powdered sugar on top.
