vegan red velvet cake
This is my Husbands Birthday cake. He wanted a cake that was healthy so I decided to do a whole wheat red velvet cake and use beets to color it red instead of a lot of red food coloring. I did a three tier present cake using a silicone pan from kitchen aid. made a good Birthday cake.

- 1 can beets
- - water
- - applesauce, unsweetened
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1 teaspoon braggs apple cider vinegar
- 1 cup whole wheat flour
- 1/2 cup unbleached white flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1 tablespoon cornstarch
- 2 tablespoons cornstarch
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
How To Make vegan red velvet cake

Step 1drain beets reserving liquid. Put beets into the food processor with 1/4 cup of reserved beet juice and puree until smooth. set aside.

Step 2Preheat oven to 325 degrees. oil your cake pan with coconut oil and set aside.

Step 3put the pureed beets into a 2 cup measuring cup and add as much applesauce as needed to make 2 cups. Add the 2 Tablespoons of water, vanilla extract, and apple cider to the beets and mix well.

Step 4In another bowl mix the dry ingredients together; then add the beet mixture and stir until well-combined.

Step 5Bake for 35-60 minutes, depending on the size of pan you use. Test by inserting a toothpick into the center; it's done when the toothpick comes out clean. Allow to cool completely before icing your cake.
