This is my Husbands Birthday cake.

He wanted a cake that was healthy so I decided to do a whole wheat red velvet cake and use beets to color it red instead of a lot of red food coloring.

I did a three tier present cake using a silicone pan from kitchen aid. made a good Birthday cake.

    vanilla extract

    braggs apple cider vinegar
  • 1 c
    whole wheat flour
  • 1/2 c
    unbleached white flour
  • 1/2 c
    cocoa powder
  • 1 c
    sugar
  • 1 Tbsp
    cornstarch
  • 2 Tbsp
    cornstarch
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/4 tsp
    cinnamon

How to Make Vegan Red Velvet Cake

Step-by-Step

  1. drain beets reserving liquid. Put beets into the food processor with 1/4 cup of reserved beet juice and puree until smooth. set aside.
  2. Preheat oven to 325 degrees. oil your cake pan with coconut oil and set aside.
  3. put the pureed beets into a 2 cup measuring cup and add as much applesauce as needed to make 2 cups. Add the 2 Tablespoons of water, vanilla extract, and apple cider to the beets and mix well.
  4. In another bowl mix the dry ingredients together; then add the beet mixture and stir until well-combined.
  5. Bake for 35-60 minutes, depending on the size of pan you use. Test by inserting a toothpick into the center; it's done when the toothpick comes out clean. Allow to cool completely before icing your cake.
