A friend brought this to work one day and it has been one my family has enjoyed for years.

  • 2 c
  • 6 medium
  • 12 oz
    box vanilla waffers, crushed
  • 1/2 c
  • 7 oz
    flaked coconut
  • 1 1/2 c
    chopped pecans
  • 1 tsp
    vanilla extract

How to Make Vanilla waffer cake


  1. Cream margarine and sugar until smooth, add one egg at a time, beating after each one.
  2. add vanilla waffers alternately with milk. add coconut and pecans
  3. pour into a greased floured bunt or tube pan. bake at 275 degrees for 1-1/2 to 1-3/4 hours or untill light brown and cracked on top.
