I loved it when my Mom made this cake and to have a nice warm piece with a glass of milk, bring's back fond memories.

Ingredients

  • 1 c
    coconut
  • 1 c
    sugar
  • 3 c
    vanilla wafer crumbs
  • 1 stick
    butter, melted
  • 3
    eggs
  • 3/4 c
    milk
  • 1 c
    pecans chopped
  • 1 tsp
    vanilla extract
  • FROSTING

  • 1 stick
    butter, melted
  • 1/4 c
    half and half
  • 1 c
    brown sugar
  • 2 c
    powered sugar
  • 1 tsp
    vanilla extract

How to Make Vanilla Wafer Cake

Step-by-Step

  1. Combine all ingredients in large bowl. Pour into a 9 x 13 pan or Bundt Pan, greased. Bake for 35 to 45 minutes, until toothpick comes out clean.
  2. Frosting - Cook first three ingredients in sauce pan for 5 minutes after coming to a boil. Remove from heat and add the 2 cups of powered sugar and teaspoon of vanilla. Mix well, spread or pour over the cake. Enjoy!
