Ingredients
- IN A 9X13 CAKE PAN, MELT 1/2 CUP OF BUTTER IN A 350 DEGREE OVEN. SPRINKLE ON TOP OF MELTED BUTTER (IN THIS ORDER):
- 1 cup brown sugar, firmly packed
- 1/2 cup pecans, chopped
- 3/4 cup flaked coconut
- 1 - (20 ounce) can crushed pineapple-drained (save juice)
- THEN IN A LARGE MIXING BOWL, COMBINE:
- 1/2 cup cooking oil
- 3 - eggs
- 2 cups sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon rum extract---optional
- 1/4 teaspoon cinnamon
- 1/2 cup evaporated milk
- 3 cups all purpose flour, sifted
- plus - the juice drained off pineapple

Step 1Pour this mixture into pan over the pineapple. Bake in pre-heated oven on 350 degrees for 40 minutes. Turn oven off, but leave cake inside oven for another 15 minutes.

Step 2After 15 min., take out of oven and turn out onto a large oblong serving platter.
