My Uncle Johnny, one of my mother's brothers, sent us this recipe in the '70s. It's a Texas treat I hope you'll enjoy!

Ingredients

  • 6 - eggs - separated
  • 1 pound brown sugar
  • 1 pound margarine or butter
  • 4 cups flour
  • 1 teaspoon baking powder
  • 8 ounces glazed cherries
  • 8 ounces glazed pineapple
  • 3-1/2 tablespoons lemon extract
  • 1 pound shelled pecans

How To Make uncle johnny's texas pecan cake

  • Step 1
    Cream together brown sugar and margarine or butter. Add egg yolks. Reserve egg whites for Step 5.
  • Step 2
    Dredge fruit in 2 cups of the flour.
  • Step 3
    Mix baking powder and remaining two cups of flour, and add to sugar and egg batter.
  • Step 4
    Stir in fruit mixture from Step 2.
  • Step 5
    Beat egg whites to a soft peak and fold in.
  • Step 6
    Pour into either a prepared 13 x 9 pan or Bundt pan, sprayed with cooking spray.
  • Step 7
    Bake at 225 degrees for 3 to 3-1/2 hours, considering not all ovens were created equal. ;)
  • Step 8
    Enjoy a big ol' hunk of Texas goodness with a large dollop of your favorite vanilla ice cream. Mmm-mmm good! ;)
