I don't like traditional fruit cake, so this is the one that my mother always made for me during the Christmas holidays. It tastes more like candy than fruit cake.

Ingredients

  • 2 cups pecans, chopped
  • 2 cups chopped dates
  • 1 can eagle brand milk
  • 1 pound graham cracker crumbs
  • 8 ounces maraschino cherries, drained and chopped, save the juice
  • 1 stick butter
  • 2 cups miniature marshmallows

How To Make unbaked fruit cake

  • Step 1
    Melt the butter in the cherry juice. Add the dates and cook until they soften.
  • Step 2
    Add the marshmallows. Melt. Add the eagle brand milk. Mix well.
  • Step 3
    Add graham crackers and chopped pecans. Press into a buttered bundt pan.
  • Step 4
    Note: The original recipe calls for 1/4 cup shredded coconut. I leave it out because my family will not eat coconut.
