This was my "go to" recipe when I needed dessert and we were "poor as church mice!" newly wed and now retired with SS...guess we've come full circle! These recipes are coming in handy :) This cake is so fluffy and great taste!

Blue Ribbon Recipe

What a refreshing recipe! Simple and delicious, this is an easy cake to whip together on short notice.... oh, and it tastes great too!

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 - eggs
  • 2 1/4 cups all purpose flour, sifted
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

How To Make two egg cake

  • Step 1
    Pre-heat oven to 350. Bake about 30 minutes or until tooth pick comes out clean.
  • Step 2
    Cream shortenting (Crisco), sugar and vanilla until light and fluffy. Add eggs and beat thoroughly. Add ingredients ALTERNATLY with milk, mixing after each addition.
  • Step 3
    Bake in prepared (greased and lightly floured) 8" round cake pans.
