This is one of my adopted recipes. I haven't made it yet, but when I do, I will add comments. It sounds good , doesn't it? I may have to try adding some lavender to it to make it "Provence" cheesecake. ??????????

Ingredients

  • 3 pounds ricotta cheese
  • 8 - eggs
  • 2 cups sugar
  • 1 cup milk
  • 2 - oranges, grated zest only
  • 2 - lemons, grated zest only
  • 2 2/3 ounces orange liqueur
  • 1 tablespoon butter, clarified
  • 1/4 cup bread crumbs

How To Make tuscan cheesecake

  • Step 1
    Preheat oven to 350.
  • Step 2
    Beat ricotta cheese with blender until smooth.
  • Step 3
    Add eggs, sugar and milk.
  • Step 4
    Blend until well-mixed and smooth.
  • Step 5
    Add orange and lemon zest and orange liqueur. Mix well.
  • Step 6
    Grease one cheesecake pan with butter and coat lightly with bread crumbs.
  • Step 7
    Fill pan 3/4 of the way with cheesecake mixture.
  • Step 8
    Set pan in a larger pan filled half full with water and bake 1-1/4 hours.
  • Step 9
    Turn oven off, leaving the cake within.
  • Step 10
    Let stand for one hour.
  • Step 11
    Remove, let cool and refrigerate.
