1Make the Swirl:Combine the cream cheese, sugar, eggs, sour cream, heavy cream & vanilla until smooth..set aside.
2Make the cake: Preheat oven to 350 .. generously coat a 10-15 cup Bundt pan with cooking spray and dust with flour, tapping out excess. Whisk the flour, sugar, cocoa powder, baking soda and salt in a large bowl. Whisk the vegetable oil, sour cream, eggs, food coloring, vanilla, vinegar and 1/4 cup water in a medium bowl.
3Combine wet & dry ingredients just until combined. Spread 1/2 batter in pan, top with cream cheese mixture, top with remaining batter.
4Bake until top is cracked & tester comes out clean......about 1 hr and 10 mins. Cool 20 mins...invert on plate and cool completely ... approx. 2 hrs.
5Make Glaze: Combine cream cheese, conf. sugar, sour cream, vanilla & salt until smooth, pour/spread on cooled cake.
