Ingredients

  • FOR THE SWIRL:

  • 2
    8-ounce packages cream cheese
  • 2/3 c
    granulated sugar
  • 2
    large eggs
  • 3 Tbsp
    sour cream
  • 3 Tbsp
    heavy cream
  • 1 tsp
    vanilla extract
  • FOR THE CAKE:

  • 2-1/2 c
    all purpose flour
  • 1-3/4 c
    granulated sugar
  • 2 Tbsp
    unsweetened cocoa powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1-1/2 c
    vegetable oil
  • 3/4 c
    sour cream
  • 2
    large eggs at room temperature
  • 1-1/2 tsp
    red food coloring
  • 1 tsp
    vanilla extract
  • 1 tsp
    distilled white vinegar
  • FOR THE GLAZE:

  • 4 oz
    cream cheese
  • 1/2 c
    confectioners sugar
  • 1/2 c
    sour cream
  • 1 tsp
    vanilla extract
  • pinch
    salt

How to Make TUNNEL IN THE MIDDLE, RED VELVET CAKE

Step-by-Step

  1. Make the Swirl:Combine the cream cheese, sugar, eggs, sour cream, heavy cream & vanilla until smooth..set aside.
  2. Make the cake: Preheat oven to 350 .. generously coat a 10-15 cup Bundt pan with cooking spray and dust with flour, tapping out excess. Whisk the flour, sugar, cocoa powder, baking soda and salt in a large bowl. Whisk the vegetable oil, sour cream, eggs, food coloring, vanilla, vinegar and 1/4 cup water in a medium bowl.
  3. Combine wet & dry ingredients just until combined. Spread 1/2 batter in pan, top with cream cheese mixture, top with remaining batter.
  4. Bake until top is cracked & tester comes out clean......about 1 hr and 10 mins. Cool 20 mins...invert on plate and cool completely ... approx. 2 hrs.
  5. Make Glaze: Combine cream cheese, conf. sugar, sour cream, vanilla & salt until smooth, pour/spread on cooled cake.
