Ingredients For triple ginger pound cake

2 3/4 c sugar

1 1/4 c butter or margarine,softened

1 t. grated fresh ginger root

1 t. vanilla

5 eggs
-
3 c all purpose flour
-
2 t. ground ginger
-
1 t. baking powder
-
1/4 t. salt
-
1 c milk
-
1/2 c finely chopped crystalized ginger
- PINEAPPLE CREAM:

2 c heavy whipping cream
-
2 t. confectioner sugar
-
20 oz can crushed pineapple,well drained
How To Make triple ginger pound cake

1Heat oven to 350. Grease and flour 12-cup tube pan or 2 9x5x3 inch loaf pans. Beat sugar,butter,ginger root,vanilla and eggs in a large bowl on low speed 30 seconds. Beat on high speed 5 minutes. Mix dry ingredients together. Beat into creamed mixture alternately with milk on low speed. Fold in crystallized ginger till evenly mixed. Spread in pan. Bake 1 hour 10 minutes. Cool 20 minutes. Remove from pan. Cool completely on wire rack. Serve with Pineapple Cream. Beat whipping cream and sugar on high speed in a chilled bowl till stiff. Fold in pineapple.
