totally awesome carrot cake
This recipe came from a friend I worked with.Everyone brought in a favorite recipie and we made a cookbook out of them. Some of them were excellent, this is one that eveyone loved.

Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 2 tablespoons cinnamon
- 1/2 teaspoon salt
- 3 large eggs
- 3/4 cup vegetable oil
- 3/4 cup buttermilk
- 2 cups sugar
- 2 teaspoons vanilla
- 1 can 8 oz crushed pineapple, drained
- 1/4 cup raisins
- 2 cups carrots, grated
- 1 cup coconut, shredded
- 1 cup walnuts, chopped
- CREAM CHEESE FROSTING
- 1/4 pound butter, softened
- 2 packages 8 oz. each, cream cheese, softened
- 2 teaspoons vanilla
- 1 to 2 cups confectioners' sugar (add to taste)
- CREAM TOGETHER BUTTER AND CREAM CHEESE. ADD VANILLA AND SUGAR AND BEAT UNTIL A SMOOTH, SPREADABLE CONSISTENCY IS ACHIEVED.
How To Make totally awesome carrot cake

Step 1Grease and flour 9x13 cake pan.

Step 2Preheat oven to 350 deg.

Step 3Sift flour, soda, cinnamon and salt together and set aside.

Step 4In large bowl: beat eggs then add oil, buttermilk, sugar and vanilla. Mix together.

Step 5Add flour mixture, pineapple, carrots, coconut, walnuts and raisins. Stir well.

Step 6Bake for 50 minutes or until done.

Step 7Let cool then frost.
