totally awesome carrot cake

This recipe came from a friend I worked with.Everyone brought in a favorite recipie and we made a cookbook out of them. Some of them were excellent, this is one that eveyone loved.

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 tablespoons cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 3/4 cup buttermilk
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 can 8 oz crushed pineapple, drained
  • 1/4 cup raisins
  • 2 cups carrots, grated
  • 1 cup coconut, shredded
  • 1 cup walnuts, chopped
  • CREAM CHEESE FROSTING
  • 1/4 pound butter, softened
  • 2 packages 8 oz. each, cream cheese, softened
  • 2 teaspoons vanilla
  • 1 to 2 cups confectioners' sugar (add to taste)
  • CREAM TOGETHER BUTTER AND CREAM CHEESE. ADD VANILLA AND SUGAR AND BEAT UNTIL A SMOOTH, SPREADABLE CONSISTENCY IS ACHIEVED.

How To Make totally awesome carrot cake

  • Step 1
    Grease and flour 9x13 cake pan.
  • Step 2
    Preheat oven to 350 deg.
  • Step 3
    Sift flour, soda, cinnamon and salt together and set aside.
  • Step 4
    In large bowl: beat eggs then add oil, buttermilk, sugar and vanilla. Mix together.
  • Step 5
    Add flour mixture, pineapple, carrots, coconut, walnuts and raisins. Stir well.
  • Step 6
    Bake for 50 minutes or until done.
  • Step 7
    Let cool then frost.
