"tommy's coconut cake"

This cake is in Memory of Thomas "Tom" Pitts who went to be with Lord on April 23, 2012. He was the son of my best friend Cindy. One of his favorite cakes was Coconut Cake. I put my twist of love while making it. We will miss him so much. Please pray for the family.

Ingredients

  • 1 box duncan hines white cake mix
  • 1 cup pina colada drink mix
  • 1/4 cup mayonnaise
  • 3 - lg eggs
  • 2 cups shredded coconut
  • 2 cans vanilla frosting

How To Make "tommy's coconut cake"

  • Step 1
    Preheat oven to 350F. Spray 2-9inch cake pans. In mixing bowl add first 4 ingredients. Mix according to directions on cake mix box. Bake for 25 minutes. Let cool for 10 minutes. Invert onto cooling rack. Frost & sprinkle coconut all around cake and on the top.
