Searching for a coconut cake so that we can have something besides chocolate! Turn this coconut into this coconut lime and toasted the coconut before putting on top...nice!

Ingredients

  • 1 box
    yellow cake mix
  • 1 box
    coconut lime pudding mix, large
  • 1/4 c
    oil
  • 1 small
    sour cream
  • 1 can(s)
    cream of coconut
  • 3 large
    eggs, room temp and beaten
  • 1 pkg
    cream cheese, 8 oz softened
  • 1 box
    powdered sugar
  • 4 Tbsp
    milk
  • 1 tsp
    coconut extract
  • 1 bag(s)
    coconut, toasted

How to Make Toasted Coconut Lime Cake

Step-by-Step

  1. Mix first 6 ingredients, pour into greased floured 9x13 pan and bake at 350 degrees for 45 minutes.
  2. Combine the next four ingredients to make the icing and spread over warm cake. Top with bag of toasted coconut!
