Toasted Coconut Cake
·6 t butter
·2 c shredded coconut
·1 c finely chopped pecans
·1 white cake mix( i like duncan hines)
·ingredients specified on the cake mix box
·8 oz cream cheese
·2 teaspoons milk
·2 teaspoons vanilla
·3-3 1/2 c powdered sugar
How to Make Toasted Coconut Cake
- Preheat oven to 350 degrees.
Melt 3 T butter in a skillet add coconut and pecans,cooking and stirring till golden brown.Drain.
Mix cake according to direction adding 1 c coconut mixture.Divide among 3 8-inch greased & floured cake pans.Bake according to directions.
Cream remaining 3 T. butter and cream cheese until light.Add milk,vanilla and sugar 1 c at a time beating well until spreading consistency add remaining coconut mixture reserving 1/2 c to sprinkle on top.Fill and frost cakes.
