tina's rhubarb cake
This has been a spring standard for almost 50 years. Everyone seems to like it so I keep sharing it with neighbors now that it is just my husband and myself.

Ingredients
- 1 1/2 cups brown sugar, firmly packed
- 1/2 cup butter or butter flavored shortening
- 1 - egg
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sour milk (1 tbsp vinegar in 1 cup milk, let rest 5 minutes)
- 1 1/2 cups raw rhubarb sliced thinly
- TOPPING
- 1/2 cup brown sugar, firmly packed
- 1 teaspoon ground cinnamon
- 1/2 cup chopped nuts
How To Make tina's rhubarb cake

Step 1Cream butter and brown sugar. Add egg and beat until creamy.

Step 2Sift flour, baking powder, baking soda and salt

Step 3Add flour mixture and milk to sugar mixture. Stir in rhubarb. In small bowl mix topping ingredients. Sprinkle on batter

Step 4Bake in 9-13 greased pan 350 degrees for 30-35 minutes
