This has been a spring standard for almost 50 years. Everyone seems to like it so I keep sharing it with neighbors now that it is just my husband and myself.

Ingredients

Add to Grocery List

1 1/2 c
brown sugar, firmly packed
1/2 c
butter or butter flavored shortening
1
egg
2 c
all purpose flour
1 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
1 c
sour milk (1 tbsp vinegar in 1 cup milk, let rest 5 minutes)
1 1/2 c
raw rhubarb sliced thinly

TOPPING

1/2 c
brown sugar, firmly packed
1 tsp
ground cinnamon
1/2 c
chopped nuts

How to Make Tina's Rhubarb Cake

Step-by-Step

  • 1Cream butter and brown sugar. Add egg and beat until creamy.
  • 2Sift flour, baking powder, baking soda and salt
  • 3Add flour mixture and milk to sugar mixture. Stir in rhubarb. In small bowl mix topping ingredients. Sprinkle on batter
  • 4Bake in 9-13 greased pan 350 degrees for 30-35 minutes
