the real spanish bar cake

Does anyone remember The Spanish Bar Cake that A&P grocery stores use to have? This is about as close as I have found to the real thing! The first bite brought back great memories YUM!!! I found this on another site a while back and just got around to making it. I frosted mine with a cream cheese frosting and it was perfect. Photo is my own

Ingredients

  • 2 1/4 cups all purpose flour
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 4 tablespoons cocoa, unsweetened
  • 2 teaspoons cinnamon
  • 2 teaspoons allspice
  • 2 teaspoons ground cloves
  • 1 teaspoon ginger
  • 1/2 cup canola or vegetable oil
  • 1/4 cup melted butter
  • 1 cup applesauce
  • 1 cup sour cream
  • 2 medium eggs
  • 1 1/2-2 cups raisins, soaked in warm water about 5 minutes to plump
  • CREAM CHEESE FROSTING
  • 8 ounces cream cheese softened
  • 4 tablespoons soft butter
  • 2 teaspoons vanilla extract
  • 2 1/2 plus cups powdered sugar
  • 1/3 cup milk (use only if you need to)
  • 1 tablespoon lemon juuice

How To Make the real spanish bar cake

  • Step 1
    Heat oven to 350 degrees F Prepare a 9x13 in.pan by spraying with non stick spray
  • Step 2
    In a large bowl, whisk all the dry ingredients together.
  • Step 3
    add oil,melted butter, applesauce, sour cream and eggs mix well and then add in the raisins, stir to combine
  • Step 4
    Pour batter into the prepared pan and bake for about 30-35 minutes or until done when tested with a toothpick. Let cake cool completely before frosting.
  • Step 5
    frost with your favorite cream cheese frosting (or butter cream can be used)
  • Step 6
    For cream cheese frosting- Mix all ingredients beating well adding more milk or powdered sugar as needed to make it smooth and easy to spread
