THERE ISN'T A BETTER CARROT CAKE THAN THIS. MY MOM'S CARROT CAKE RECIPE IS THE BEST. YOU WILL NEVER WANT ANOTHER CARROT CAKE AFTER THIS ONE.

Ingredients

  • 3 - eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups sugar
  • 1 cup vegetable oil
  • 1 8 ounces can crushed pineapple drained (save juice and 1 tbs for topping)
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup raisins
  • 2 cups shredded carrots
  • 1 cup coconut
  • 1 cup chopped walnuts ( save 1 tbs for topping)
  • CREAM CHEESE FROSTING
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 2 pounds powdered sugar
  • - reserved pineapple juice

How To Make the real carrot cake

  • Step 1
    beat eggs, vanilla and sugar
  • Step 2
    add oil and crushed pineapple
  • Step 3
    add flour,baking soda, baking powder,salt cinnamon,raisins,shredded carrots, coconut, and walnuts.
  • Step 4
    pour into 9x13 pan. bake 350 for 45 min. toothpick test.
  • Step 5
    CREAM CHEASE FROSTING
  • Step 6
    BEAT ROOM TEMP. CREAM CHEESE, BUTTER, VANILLA,AND POWDER SUGAR TOGETHER. ADD PINEAPPLE JUICE AS NEEDED WHILE BEATING. CAREFUL NOT TO ADD TO MUCH. SPREAD OVER COOLED CAKE AND TOP WITH RESERVED PINEAPPLE AND WALNUTS
