Ingredients
- 3 - eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups sugar
- 1 cup vegetable oil
- 1 8 ounces can crushed pineapple drained (save juice and 1 tbs for topping)
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 cup raisins
- 2 cups shredded carrots
- 1 cup coconut
- 1 cup chopped walnuts ( save 1 tbs for topping)
- CREAM CHEESE FROSTING
- 8 ounces cream cheese
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 2 pounds powdered sugar
- - reserved pineapple juice
How To Make the real carrot cake

Step 1beat eggs, vanilla and sugar

Step 2add oil and crushed pineapple

Step 3add flour,baking soda, baking powder,salt cinnamon,raisins,shredded carrots, coconut, and walnuts.

Step 4pour into 9x13 pan. bake 350 for 45 min. toothpick test.

Step 6BEAT ROOM TEMP. CREAM CHEESE, BUTTER, VANILLA,AND POWDER SUGAR TOGETHER. ADD PINEAPPLE JUICE AS NEEDED WHILE BEATING. CAREFUL NOT TO ADD TO MUCH. SPREAD OVER COOLED CAKE AND TOP WITH RESERVED PINEAPPLE AND WALNUTS
