This recipe was given to me by a dear girlfriend. It came from the Knights of Columbus women's group. They served it all the time at their church. I got it when we played bunco there! It's been my favorite ever since.

Ingredients

  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    sugar
  • 1 c
    margarine
  • 1 tsp
    vanilla
  • 2
    eggs, beaten
  • 1 c
    buttermilk. (if you do not have buttermilk, use 2 teaspoons vinegar in milk).

How to Make The BEST Coffee Cake

Step-by-Step

  1. Topping: 1/2 cup white sugar
    1/2 brown sugar
    1 cup chopped walnuts
    1 teaspoon cinnamon
  2. In small bowl, mix topping ingredients and set aside.
    In mixing bowl, cream margarine and sugar. Add eggs, vanilla and buttermilk. Add remaining ingredients.
    Spread 1/2 of the batter in a greased and floured 9 x 13 pan.
    Sprinkle 1/2 of the topping mixture over the batter. Gently spread remaining batter over topping, then sprinkle remaining topping on the second layer of batter.
    Bake at 350 for 35 minutes.
