- 3 cans grated coconut in syrup
- 1 box duncan hines regular cake mix, ( per directions on box) eggs, water, oil
- 2-3 cans evaporated milk
- 1 can duncan hines cream cheese icing

Step 1PREPARE CAKE MIX ( DIRECTIONS ON BOX FOR 2- 9 IN ROUND CAKE PANS). BAKE ACCORDING TO BOX.

Step 2POUR CANS OF COCONUT INTO SAUCEPAN. ADD BUTTER AND EVAPORATED MILK. COOK FOR ABOUT 45 MINUTES, STIRRING OFTEN. LOWER FIRE AND DON'T LET IT STICK. ADD MORE EVAPORATED MILK SLOWLY IF IT BEGINS TO STICK. COOK IT DOWN UNTIL IT BECOMES SOMEWHAT THICK.

Step 3AFTER CAKE IS DONE, FLIP ONE CAKE PAN ONTO CAKE PLATE STILL WARM AND POUR 1/2 OF COCONUT FILLING OVER CAKE HALF. REPEAT OVER NEXT LAYER.

Step 4LET COOL THROUGHLY. ICE AROUND THE SIDE OF CAKE WITH CREAM CHEESE ICING.
