Ingredients

1 3/4 c
sugar
1 1/2 c
vegetable oil
3
eggs
1 tsp
vanilla extract
2 c
all purpose flour
1 tsp
baking soda
1 tsp
cinnamon
1/4 tsp
salt
3 c
carrots, grated
1 c
walnuts, chopped (optional)

CREAM CHEESE FROSTING

1/4 c
butter, room temperature
8 oz
cream cheese, room temperature
1/2 tsp
vanilla extract
1/8 tsp
lemon extract
1/2 lb
powdered sugar

OPTIONAL GARNISH

1/2 c
walnuts, chopped

How to Make THE BEST Carrot Cake

Step-by-Step

  • 1Heat oven to 350 degrees.
  • 2Grease and flour 13x9x2 pan.
  • 3Mix sugar, oil, eggs and vanilla until blended. Beat approximately 1 minute.
  • 4Add flour, baking soda, cinnamon and salt. Mix until dry ingredients are incorporated.
  • 5Stir in carrots and nuts (optional).
  • 6Bake approximately 35-45 minutes (until toothpick inserted in center comes out clean).
  • 7Cool cake.
  • 8For Frosting:
  • 9Cream butter, cream cheese, vanilla and lemon extract until light and fluffy.
  • 10Add powdered sugar slowly until all ingredients are incorporated.
  • 11Frost cooled cake. Sprinkle with walnuts (optional)
  • 12Enjoy!
