Ingredients
- 1 3/4 cups sugar
- 1 1/2 cups vegetable oil
- 3 - eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 3 cups carrots, grated
- 1 cup walnuts, chopped (optional)
- CREAM CHEESE FROSTING
- 1/4 cup butter, room temperature
- 8 ounces cream cheese, room temperature
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon lemon extract
- 1/2 pound powdered sugar
- OPTIONAL GARNISH
- 1/2 cup walnuts, chopped
How To Make the best carrot cake

Step 1Heat oven to 350 degrees.

Step 2Grease and flour 13x9x2 pan.

Step 3Mix sugar, oil, eggs and vanilla until blended. Beat approximately 1 minute.

Step 4Add flour, baking soda, cinnamon and salt. Mix until dry ingredients are incorporated.

Step 5Stir in carrots and nuts (optional).

Step 6Bake approximately 35-45 minutes (until toothpick inserted in center comes out clean).

Step 9Cream butter, cream cheese, vanilla and lemon extract until light and fluffy.
