I have had numerous comments on this cake, all good...the latest was "phenomenal". Enjoy!

Ingredients

  • 1 3/4 cups sugar
  • 1 1/2 cups vegetable oil
  • 3 - eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 cups carrots, grated
  • 1 cup walnuts, chopped (optional)
  • CREAM CHEESE FROSTING
  • 1/4 cup butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon lemon extract
  • 1/2 pound powdered sugar
  • OPTIONAL GARNISH
  • 1/2 cup walnuts, chopped

How To Make the best carrot cake

  • Step 1
    Heat oven to 350 degrees.
  • Step 2
    Grease and flour 13x9x2 pan.
  • Step 3
    Mix sugar, oil, eggs and vanilla until blended. Beat approximately 1 minute.
  • Step 4
    Add flour, baking soda, cinnamon and salt. Mix until dry ingredients are incorporated.
  • Step 5
    Stir in carrots and nuts (optional).
  • Step 6
    Bake approximately 35-45 minutes (until toothpick inserted in center comes out clean).
  • Step 7
    Cool cake.

    For Frosting:
  • Step 9
    Cream butter, cream cheese, vanilla and lemon extract until light and fluffy.
  • Step 10
    Add powdered sugar slowly until all ingredients are incorporated.
  • Step 11
    Frost cooled cake. Sprinkle with walnuts (optional)
