Ingredients

  • 1 3/4 c
    sugar
  • 1 1/2 c
    vegetable oil
  • 3
    eggs
  • 1 tsp
    vanilla extract
  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/4 tsp
    salt
  • 3 c
    carrots, grated
  • 1 c
    walnuts, chopped (optional)
  • CREAM CHEESE FROSTING

  • 1/4 c
    butter, room temperature
  • 8 oz
    cream cheese, room temperature
  • 1/2 tsp
    vanilla extract
  • 1/8 tsp
    lemon extract
  • 1/2 lb
    powdered sugar
  • OPTIONAL GARNISH

  • 1/2 c
    walnuts, chopped

How to Make THE BEST Carrot Cake

Step-by-Step

  1. Heat oven to 350 degrees.
  2. Grease and flour 13x9x2 pan.
  3. Mix sugar, oil, eggs and vanilla until blended. Beat approximately 1 minute.
  4. Add flour, baking soda, cinnamon and salt. Mix until dry ingredients are incorporated.
  5. Stir in carrots and nuts (optional).
  6. Bake approximately 35-45 minutes (until toothpick inserted in center comes out clean).
  7. Cool cake.
  8. For Frosting:
  9. Cream butter, cream cheese, vanilla and lemon extract until light and fluffy.
  10. Add powdered sugar slowly until all ingredients are incorporated.
  11. Frost cooled cake. Sprinkle with walnuts (optional)
  12. Enjoy!
