Ingredients

  • 2 c
    flour
  • 2 tsp
    baking powder
  • 1 1/2 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    cinnamon
  • 2 c
    sugar
  • 1 1/2 c
    oil
  • 4
    eggs
  • 1/2 c
    chopped nuts
  • 2 c
    grated carrots
  • 1 can(s)
    (8 oz.) crushed pineapple, drained
  • CREAM CHEESE ICING

  • 1 pkg
    (8 oz.) cream cheese, softened
  • 1/2 c
    butter
  • 1 box
    (1 pound) powdered sugar
  • 2 tsp
    vanilla

How to Make The Best Carrot Cake Ever

Step-by-Step

  1. Sift dry ingredients. Add sugar, oil and eggs.
    Combine and beat until batter is smooth.
  2. Stir in carrots. When well blended, add nuts and pineapple. Mix thoroughly.
  3. Put batter into a greased and floured 13 X 9 inch pan.
  4. Bake at 350 degrees for 1 hour.
  5. Cream Cheese Icing:

    Cream together cream cheese and butter.
  6. Add remaining ingredients and beat until fluffy.
  7. This is enough icing for a layer cake, 1/2 recipe will frost a sheet cake.
