baking powder

baking soda
1 tsp
salt
2 tsp
cinnamon
2 c
sugar
1 1/2 c
oil

eggs
1/2 c
chopped nuts
2 c
grated carrots
1 can(s)
(8 oz.) crushed pineapple, drained

CREAM CHEESE ICING

1 pkg
(8 oz.) cream cheese, softened
1/2 c
butter
1 box
(1 pound) powdered sugar
2 tsp
vanilla

How to Make The Best Carrot Cake Ever

Step-by-Step

  • 1Sift dry ingredients. Add sugar, oil and eggs.
    Combine and beat until batter is smooth.
  • 2Stir in carrots. When well blended, add nuts and pineapple. Mix thoroughly.
  • 3Put batter into a greased and floured 13 X 9 inch pan.
  • 4Bake at 350 degrees for 1 hour.
  • 5Cream Cheese Icing:

    Cream together cream cheese and butter.
  • 6Add remaining ingredients and beat until fluffy.
  • 7This is enough icing for a layer cake, 1/2 recipe will frost a sheet cake.
