Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups sugar
- 1 1/2 cups oil
- 4 - eggs
- 1/2 cup chopped nuts
- 2 cups grated carrots
- 1 can (8 oz.) crushed pineapple, drained
- CREAM CHEESE ICING
- 1 package (8 oz.) cream cheese, softened
- 1/2 cup butter
- 1 box (1 pound) powdered sugar
- 2 teaspoons vanilla
How To Make the best carrot cake ever

Step 1Sift dry ingredients. Add sugar, oil and eggs. Combine and beat until batter is smooth.

Step 2Stir in carrots. When well blended, add nuts and pineapple. Mix thoroughly.

Step 3Put batter into a greased and floured 13 X 9 inch pan.

Step 4Bake at 350 degrees for 1 hour.

Step 5Cream Cheese Icing: Cream together cream cheese and butter.

Step 6Add remaining ingredients and beat until fluffy.

Step 7This is enough icing for a layer cake, 1/2 recipe will frost a sheet cake.
