Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 1 1/2 cups oil
  • 4 - eggs
  • 1/2 cup chopped nuts
  • 2 cups grated carrots
  • 1 can (8 oz.) crushed pineapple, drained
  • CREAM CHEESE ICING
  • 1 package (8 oz.) cream cheese, softened
  • 1/2 cup butter
  • 1 box (1 pound) powdered sugar
  • 2 teaspoons vanilla

How To Make the best carrot cake ever

  • Step 1
    Sift dry ingredients. Add sugar, oil and eggs. Combine and beat until batter is smooth.
  • Step 2
    Stir in carrots. When well blended, add nuts and pineapple. Mix thoroughly.
  • Step 3
    Put batter into a greased and floured 13 X 9 inch pan.
  • Step 4
    Bake at 350 degrees for 1 hour.
  • Step 5
    Cream Cheese Icing: Cream together cream cheese and butter.
  • Step 6
    Add remaining ingredients and beat until fluffy.
  • Step 7
    This is enough icing for a layer cake, 1/2 recipe will frost a sheet cake.
