I received this recipe from a co-worker years ago. Its the best carrot cake I've ever made!

  • 2 c
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
  • 1 tsp
  • 2 c
  • 1 1/2 c
    vegatable oil
  • 4
  • 3 c
    grated carrots
  • ·
    **for frosting**
  • 8 oz
    cream cheese (room temperature)
  • 1 lb
    confectioners' sugar
  • 1/2 c
  • 2 tsp

How to Make The Best Carrot Cake


  1. Mix all ingredients, blend in oil, eggs (1 at a time) and carrots.
  2. Bake at 350 degree for 40 to 45 minutes in a 9" round pans.
  3. Mix all ingredients for frosting in a bowl and whip until combined and fluffy. Spread on cooled cake and enjoy!!
