I received this recipe from a co-worker years ago. Its the best carrot cake I've ever made!

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 1 1/2 cups vegatable oil
  • 4 - eggs
  • 3 cups grated carrots
  • - **for frosting**
  • 8 ounces cream cheese (room temperature)
  • 1 pound confectioners' sugar
  • 1/2 cup butter
  • 2 teaspoons vanilla

How To Make the best carrot cake

  • Step 1
    Mix all ingredients, blend in oil, eggs (1 at a time) and carrots.
  • Step 2
    Bake at 350 degree for 40 to 45 minutes in a 9" round pans.
  • Step 3
    Mix all ingredients for frosting in a bowl and whip until combined and fluffy. Spread on cooled cake and enjoy!!
