I received this recipe from a co-worker years ago. Its the best carrot cake I've ever made!

Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 cups sugar
- 1 1/2 cups vegatable oil
- 4 - eggs
- 3 cups grated carrots
- - **for frosting**
- 8 ounces cream cheese (room temperature)
- 1 pound confectioners' sugar
- 1/2 cup butter
- 2 teaspoons vanilla
How To Make the best carrot cake

Step 1Mix all ingredients, blend in oil, eggs (1 at a time) and carrots.

Step 2Bake at 350 degree for 40 to 45 minutes in a 9" round pans.

Step 3Mix all ingredients for frosting in a bowl and whip until combined and fluffy. Spread on cooled cake and enjoy!!
