THE Best Banana Cake

My sister made this cake, gave me the recipe, and I tweaked the frosting to make it less sticky, like cream cheese frosting usually becomes. I have never had a complaint about this cake and I've made and taken it to several places/parties. It is great for birthdays, potlucks, holidays, or just to enjoy! My coworkers at both of my jobs absolutely love it!

Ingredients

1 stick
butter, softened
1/2 c
vegetable shortening (crisco)
2 c
sugar
3-4
bananas (the riper the better!)
3
eggs
1 tsp
vanilla extract
2 tsp
baking soda
2 tsp
baking powder
3 &1/2 c
flour
1 c
buttermilk

FOR FROSTING:

2 stick
butter, softened
8 oz
cream cheese
4 &1/2 c
powdered sugar
1 pkg
whipped topping mix (one packet)
1/2-3/4 c
liquid french vanilla coffee creamer
1 c
chopped walnuts (optional)

Step-By-Step

1Preheat oven to 350 degrees and grease and flour a jelly roll or half sheet pan.
2Cream butter, Crisco, and sugar until light in color. I use a Kitchenaid mixer. Any electric mixer will do.
3Add eggs and mix well.
4Add mashed ripe bananas and mix.
5Add vanilla, baking soda, baking powder and mix.
6Alternate additions of flour and buttermilk, ending with flour.
7Bake at 350 Degrees for 25-30 minutes and test. Mine usually take anywhere from 30-40 minutes to make sure it's completely done. May get very brown on top!
8FOR FROSTING:
Cream butter, cream cheese, and whipped topping mix. Add about 1/4 cup of creamer and mix well. Add powdered sugar and mix very well. If too thick, continue to add creamer until light and fluffy like soft marshmallow.
9When cake is cooked and cooled, spread frosting evenly over top. I always add either crushed walnuts or some sort of sprinkles!
