Thanksgiving Orange Pumpkin Apple Cake

1/2 cup butter, softened
1 1/4 cups sugar
2 eggs
1/2 orange, grated (3 t. fruit, juice and peel)
2 medium apples, peeled, cored and grated
1 cup canned pumpkin puree
2 cups flour
2 t. baking powder
1/2 t. baking soda
3 t. pumpkin pie spice
1/4 cup chopped walnuts for the top


1Cream together butter and sugar. Beat in eggs until blended. Beat in orange,
apples and pumpkin. Mix next 4 ingredients and add, all at once, beating until
blended. Spread batter into greased 10 inch tube pan and sprinkle top with
walnuts, pressing them lightly into batter. Bake at 350 for about 40 to 45
minutes or until cake tester, inserted in center comes out clean. Allow to cool
in pan and cut into wedges to serve. Serves 10
This is a great cake to serve with hot spicy cider. It is moist, fruity and
sparkled with spices. It is an especially fine choice as a gift from your
kitchen during the holiday season. For gift giving, I would suggest you bake
this in 4 mini loaf foil pans, 6 x 3 inches, for about 40 minutes.
