I got this from a co-worker who made my wedding cake. Everyone at work loves this cake and has her make it for special occasions.

Ingredients
- CAKE
- 2 cups flour
- 1 teaspoon baking power
- 1 1/2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1 1/2 cups vegetable oil
- 2 cups sugar
- 2 cups grated carrots
- 8 1/2 ounces can crushed pineapple, well drained
- 4 - eggs
- 1 teaspoon vanilla
- ICING
- 1 stick butter
- 1 teaspoon vanilla
- 1 pound powdered sugar
- 8 ounces cream cheese softened

Step 1CAKE-Mix together oil, sugar, eggs, then add remaining ingredients. Grease and flower 3-9" round pans. Pour batter into pans and bake at 350 degrees for 25 to 30 minutes or until done. Toothpick stuck in middle should come out clean.

Step 2ICING-Combine all ingredients and beat until smooth. Also great with pecans in the icing as well.

Step 3Put icing between stacked layers. Ice top and sides of cake.
