I got this from a co-worker who made my wedding cake. Everyone at work loves this cake and has her make it for special occasions.

Ingredients

CAKE

2 c
flour
1 tsp
baking power
1 1/2 tsp
baking soda
2 tsp
cinnamon
1/2 tsp
salt
1 c
chopped pecans
1 1/2 c
vegetable oil
2 c
sugar
2 c
grated carrots
8 1/2 oz
can crushed pineapple, well drained
4
eggs
1 tsp
vanilla

ICING

1 stick
butter
1 tsp
vanilla
1 lb
powdered sugar
8 oz
cream cheese softened

Step-By-Step

1CAKE-Mix together oil, sugar, eggs, then add remaining ingredients. Grease and flower 3-9" round pans. Pour batter into pans and bake at 350 degrees for 25 to 30 minutes or until done. Toothpick stuck in middle should come out clean.
2ICING-Combine all ingredients and beat until smooth. Also great with pecans in the icing as well.
3Put icing between stacked layers. Ice top and sides of cake.
