Ingredients

3/4 cbutter or margarine, softened

1/2 clight brown sugar

1/2 cgranulated sugar

2 largeeggs

1 tspvanilla extract

1-3/4 call-purpose flour

1-1/2 tspbaking powder

1 ccoconut
-
2 czucchini, peeled and grated

3/4 cwalnuts, chopped

1 cpowdered sugar

1 tspvanilla extract

1/2 tspcinnamon

2-1/2 Tbspmilk
-
1-1/2 Tbspbutter or margarine, melted
How to Make Tennessee Zucchini Bars
- Cream margarine, brown sugar and granulated sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour and baking powder. Mix thoroughly. Stir in coconut, zucchini, and walnuts.
- Spread batter evenly into a greased 13 x 9 inch pan. Bake at 350 degrees for 40 minutes.
- Combine icing ingredients as listed; mix well. Spread on cooled bars.
