- 3/4 cup butter or margarine, softened
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1-3/4 cup all-purpose flour
- 1-1/2 teaspoon baking powder
- 1 cup coconut
- 2 cups zucchini, peeled and grated
- 3/4 cup walnuts, chopped
- CINNAMON ICING
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 2-1/2 tablespoon milk
- 1-1/2 tablespoon butter or margarine, melted
How To Make tennessee zucchini bars

Step 1Cream margarine, brown sugar and granulated sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour and baking powder. Mix thoroughly. Stir in coconut, zucchini, and walnuts.

Step 2Spread batter evenly into a greased 13 x 9 inch pan. Bake at 350 degrees for 40 minutes.

Step 3Combine icing ingredients as listed; mix well. Spread on cooled bars.
