If you're a fan of the basic Zucchini Bread, you need to give this recipe a try. The Cinnamon Icing is a nice touch and adds a whole depth of flavor.

Ingredients

  • 3/4 cup butter or margarine, softened
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1-3/4 cup all-purpose flour
  • 1-1/2 teaspoon baking powder
  • 1 cup coconut
  • 2 cups zucchini, peeled and grated
  • 3/4 cup walnuts, chopped
  • CINNAMON ICING
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2-1/2 tablespoon milk
  • 1-1/2 tablespoon butter or margarine, melted

How To Make tennessee zucchini bars

  • Step 1
    Cream margarine, brown sugar and granulated sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour and baking powder. Mix thoroughly. Stir in coconut, zucchini, and walnuts.
  • Step 2
    Spread batter evenly into a greased 13 x 9 inch pan. Bake at 350 degrees for 40 minutes.
  • Step 3
    Combine icing ingredients as listed; mix well. Spread on cooled bars.
